Lemon-Garlic Shrimp & Rice

Ingredients

  • ¾ cup of rice ($0.30)

  • Salt ($0.02)

  • Pepper ($0.03) 

  • ¼ cup grated Parmesan cheese ($0.75) 

  • 3 tablespoons butter ($0.25) 

  • ½ pound of shrimp ($4.25) 

  • 2 teaspoons of garlic powder ($0.08) 

  • ½ lemon ($0.35) 

  • 2 tablespoons parsley ($0.20) 


Instructions

  • Bring 1 cup of water to a boil in a medium saucepan over high heat, covered. When boiled pour in 1 cup of rice. When rice is done, stir in 1 teaspoon of salt and ½ teaspoon of pepper. Add parmesan and 1 tablespoon of butter.  

  • Season shrimp with salt and pepper. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add shrimp and garlic and cook, tossing until the shrimp are pink.




  • Remove from heat and add 2 tablespoons of water, lemon juice and parsley. 

  • Mix shrimp and rice together and enjoy.
